Authentic Manipuri Eromba Recipe for Cozy Winter Meals
Eromba is the everyday soul of Manipuri kitchens — a rustic, mashed vegetable and fermented fish preparation that has sustained families through cold months for generations. The name comes from “eeru taana lonba,” meaning to mix and mash. In winter, when fresh greens are scarce, pantry staples like Ngari, fermented bamboo shoot, and smoked king chilli become the stars. The result is warming, probiotic-rich, and deeply umami.
Ingredients (serves 4)
- 5–6 pieces Authentic Manipur Fermented Fish Ngari (200g)
- 2 medium potatoes, quartered
- 100–150 g Fermented Bamboo Shoot / Soibum (or dried version, soaked)
- 1–2 Smoked Dried King Chilli (or to taste)
- 1 medium onion, chopped
- Handful fresh coriander (or local herbs)
- Salt to taste
- Optional: a few Dry Stink Beans / Yongchak for extra punch
Method
- Clean the Ngari (remove any surface scales if present) and lightly roast or rinse.
- Pressure-cook or boil the potatoes, bamboo shoot, and king chilli until soft (2–3 whistles or 15–20 minutes). Keep the texture coarse, not silky.
- Mash everything together roughly and stir in the Ngari.
- Fold in raw chopped onion and coriander. Adjust salt and consistency with a little cooking liquid or water.
- Serve warm with steamed rice. The gentle tang from fermentation feels especially comforting in cold weather.
