How to Use Smoked King Chilli (Bhut Jolokia): Fiery Chilli Oil and Winter Warming Tips
Smoked dried king chilli (Bhut Jolokia) from Manipur brings intense heat and a distinctive smoky aroma. A little goes a long way. Turning it into chilli oil is one of the most useful winter pantry projects — it adds instant warmth to soups, rice, eggs, and stews.
Simple King Chilli Oil
Ingredients
- 4–6 Smoked Dried King Chillies (or more for heat lovers)
- 150–200 ml neutral or mustard oil
- 4–5 garlic cloves, lightly crushed
- Optional: a pinch of salt or a few perilla seeds
Method
- Break the chillies into smaller pieces (wear gloves if sensitive).
- Gently warm the oil with garlic until fragrant (do not burn).
- Add the chillies and keep on very low heat for 8–12 minutes so the flavours infuse.
- Cool completely and store in a clean jar. The oil keeps for weeks in a cool place.
Everyday Uses
- Drizzle over rice or dal
- Stir into soups and stews for instant warmth
- Mix with King Chilli & Fermented Fish Pickle for a quick side
