Hawaijar / Axone Winter Chutney – Simple Fermented Soybean Side
Hawaijar (also known as Axone) is fermented soybean with deep, savoury umami. A small amount transforms simple meals. This quick chutney is a practical winter side that pairs beautifully with rice and provides the probiotic benefits of traditional fermentation.
Ingredients
- 3–4 tbsp Dried Fermented Soy Beans / Hawaijar Axone
- 1–2 Smoked Dried King Chilli
- 1 small onion or a handful of spring onion
- 2–3 garlic cloves
- Salt and a little water or cooking liquid
- Optional: a pinch of Brown Perilla Seeds
Method
- Lightly roast or soak the dried Hawaijar briefly to soften.
- Pound or blend the Hawaijar with king chilli, garlic, and onion into a coarse paste.
- Adjust salt and consistency. The chutney should be punchy but not watery.
- Serve as a side with steamed rice or stir into simple vegetable dishes.
The fermentation makes the soy easier to digest and adds natural depth that feels especially satisfying in colder months.
